Oh, hey there. It’s been awhile! I know, I know, I went a little bit AWOL for a little long while… but I’m back and I have a super exciting announcement! I am beyond thrilled to have launched my new blog and brand, Frida & Me. Honestly, this project has been a long time in the making and I feel like I just gave birth. Frida & Me is a lifestyle blog geared toward conscious living and those who are aiming to better their lives, and the world in which we live. We will be featuring clean eats, organic and cruelty-free wellness and beauty products, as well as tons of inspiration for you fellow boss babes! So, this past weekend we had kind of a crazy storm! Well, crazy for San Diego. I mean, it didn’t last long and I hit the beach later that day… but it did blow a palm frond off of my tree and force me to throw on a sweater… so, pretty crazy I would say. Anyway, I woke up Saturday morning to the rain pounding on the skylights above my bed and immediately a Jack Johnson song popped into my head…

So naturally, when I finally dragged my booty out of bed, I decided to do just that… whip up some delish, g-free, 3 ingredient banana pancakes.
Pancakes were my absolute favorite food as a kid and to this day they totally bring me back to my childhood. They are such a comfort food and a guilty pleasure, but these ones aren’t just gluten-free, they are 100% guilt free too!
What you’ll need: 2 eggs, 1 ripe banana, a dash of cinnamon. Yep, that’s it!
I used my VitaMix to mix it all up, cuz let’s face it… using a fork or whisk would require an output of energy from yours truly and that just ain’t what Saturday mornings are all about. However, if you aren’t feeling lazy or don’t have a blender / mixer / food processor, be my guest and whisk away.
Ok, back to the pancakes… throw your banana into your mixer and crack in two eggs. Throw in a dash of cinnamon and blend until smooth… but don’t totally liquify. That’s it, now you have your batter. (I like to double the recipe so that I can make pancakes for two or store the leftovers.)
Now it’s time to cooke ’em up. You can use a pan or griddle, make sure to prep with some butter, ghee, or coconut oil so that your batter doesn’t stick. I typically make mine on the griddle, but this time I decided to try out my new stonewave microwave cooker. It’s like this little adobe pot that you can pop in the microwave and it basically cooks anything and everything in a couple of minutes. I’m obsessed! So how did my pancakes turn out? Perfection! They were fluffy, delicious, and didn’t stick at all.
Top ’em off with whatever you choose… pure maple syrup, homemade whipped cream, fresh fruit, almond butter, whatever floats your boat! Enjoy, enjoy, enjoy and tell me… how do you like to spend your lazy Saturdays?
Aaaaahhhh. Sorry for the lack of posts lately :( Between a multitude of projects, house hunting (shoot me), and my camera biting the dust… keeping my head above water this past week has been a liiitttttllleee difficult.

So this week is all about catching my breath, getting back on the road to wellness, aka some major detoxification, hot yoga all day e’ry day, and a fully raw diet, and trying to squeeze in a little ‘me’ time. I’ll keep you guys posted ;)

So… what do you guys do when you need to rest-up and recharge??
News flash: I have a new obsession, or rather an old obsession coming to me in a new form…
Anyone who knows me knows that I LOVE coconut. Anything coconut. Everything coconut. Coconut milk, coconut water, coconut flakes, shredded coconut, coconut butter, coconut oil (I literally bathe in it), coconut palm sugar, plain old coconut. Basically, if you’re a coconut in any form… you are totally welcome into my life.
So, what’s this new obsession? Dang Coconut Chips. Yep, toasted, crunchy, crispy, salty, sweet coconut chips. I’ve tried other coconut chips… but these ones undoubtedly take the cake. They have the perfect taste and the perfect, crunchy consistency. I picked up a bag of these bad boys at Whole Foods the other day and it was love at first site bite. I literally died. Maybe not literally, but pretty freaking close. These are hands down the best things I have ever tasted. Yes, you can incorporate these into your favorite recipes or use them as garnishes but I’m perfectly content eating them straight from the bag.
Furthermore, coconut is totally AMAZING for you. They are rich in healthy fat and lauric acid. Coconut boosts energy, increases immunity, regulates blood sugar, nourishes the thyroid, and can help cut down on belly fat. ALl of that and they are freaking delish. These coconut chips are gluten free, dairy free, vegan, all natural, non GMO, and all of that other good stuff!! Oh ya, and they contain only three ingredients… no preservatives or nasty chemicals. Woo-hoo!

I mean… how often do you see somebody bite into a juicy apple… on the daily. But a pear? Never.
I don’t get it. I’ll admit… Pears didn’t used to cross my mind all that often until they were falling off of my sister’s pear tree by the bucket full ( who knew ) and I started eating them like cray.
Now I incorporate pears into my daily green juice… and when i start to chop that baby up I no longer want to juice it… I want to eat it. This got me thinking a lot about pears ( #deepthoughts ). Why are they so delish… and why do they do a body good?
So here’s the deal… pears are high in anti-oxidants and full of anti-inflammatory nutrients such as Vitamin E and Omega 3 Fatty Acids. They are also the second highest source of flavanols among ALL fruits and veggies.
An increased consumption of pears has been linked to a decrease in many chronic illnesses including heart disease and type II Diabetes. Furthermore, pears have been linked to a decreased cancer risk! Pears are also high in fiber, great for digestion, and contain lutein and beta-carotene with are stellar for your eye health.
That being said… a-pear-ently , pears are like, really, really good for you! Woohoo!
My G-free valentine, Erica, and I decided to team up this V-day to bring you the tastiest treats. Like, ever. I’m talking home made almond butter cups. Think Reese’s… but healthier and tastier x 100.
These babies are soooo easy to make, it’s stupid. No fancy kitchen tools. No forgetting to pre-heat the oven. Ain’t nobody got time for that!
You only need a few ingredients… most of which you most likely already have in your kitch.
+ A mini muffin tin (liners optional, yet recommended)
+ Chocolate chips (we went with organic semi-sweet)
+ Almond butter
+ Maple syrup
+ Chia seeds or chia powder
+ Pink himalayan salt

Melt your chocolate chips. You can do this using a double boiler on the stove top or just zap ’em in a microwave safe bowl at 30 second intervals until melted.
Pour your melted chocolate into your mini muffin tins. If you are not using liners, make sure to lightly grease them, preferably with coconut oil. Cover the bottom of each tin with chocolate. Make sure to spread the chocolate up the sides of each mold. This will become the chocolate ‘cup’ that holds your almond butter. Once each tin has been sufficiently chocolat-ed, pop it in the freezer for 30 minutes.
While they are freezing you can work on your almond butter mixture. Mix 1 cup almond butter with 3 tablespoons of organic maple syrup and about a spoonful of ground chia seeds. If you do not want to grind your own seeds, you can use chia powder. Mix, mix, mix until smooth.
Once your chocolate has melted, fill each cup with a spoonful of your almond butter mixture. Top off each cup with more melted chocolate and sprinkle with pink himalayan sea salt. Pop your tray in the freezer for another 30 minutes.
Voila! That’s it. So easy, so festive, and insanely delish. I may or may not have had one for breakfast today. Oops. Not sorry. It wouldn’t be Valentines without a sweet lil treat.
Let’s talk about organic produce. I’ve mentioned before that it’s definitely something I like to splurge on… & it can be a bit of a splurge.
When you buy organic, not only are you doing something good for yourself, but you are also supporting sustainable farming practices, reducing fossil fuel emissions, and cutting down on air and water pollution.
The EWG ( Environmental Working Group ) analyzes data about pesticide residue and ranks foods based on how much or little residue remains on the food. Each year they release a list of the “cleanest” and “dirtiest” foods known as The Dirty Dozen and The Clean Fifteen.
You may not choose to buy organic all the time, but research has shown that just by switching to organic as far as the dirty dozen is concerned you can reduce your exposure to pesticide by 80%. That’s a lot! Making this simple switch is totes worth it. So here they are… the dirty dozen.
As a rule of thumb I typically say… the hotter, the better!I No, I’m not one of those people that carries around a bottle of Tapatio in her purse ( though I’ll admit I used to be ), but I’m not gonna pretend I haven’t pulled out a shaker of cayenne pepper a time or two… or ten. I definitely prefer things on the spicy side… esp my drinks! So, when it comes to heat, I say… bring it!
I like to drink a TON of water. Like, a ton. Good luck finding me without my favorite sippy cup in hand. I mean, we all know it’s pretty much the best thing you can do for your body, but regular old H2O can be SUCH a bore!! Like, Snoozefest 2014. I like to mix it up so that I’m sure to get in plenty of liquids, yet don’t die of boredom.
My bevies of choice, you ask…? I have two! The first is water with a splash of lemon and a little bit LOT of cayenne pepper mixed in. It’s seriously such a tasty treat and packs some serious health benies. Number two is iced green tea, a splash of lemon, a couple drops of stevia extract, and a generous sprinkle of cayenne ← sooooooooo yum!!
So… why should you incorporate cayenne into your diet. First and foremost, it’s freaking delish, but even more importantly it can majorly amp up your health game. Cayenne pepper contains hefty amounts of vitamins A, E, C, K, and B6. If that’s not convincing enough, check out some of its other insane benefits…

Let me just say that Snip Chips seriously just took my snacking game to the next level! ← OMG. They’re made of parsnips, coconut ← my fav food in the world , and other delicious, nutritious ingreds. I’m pretty sure I have never eaten a parsnip ( until now ). I’m not even sure what one looks like. I will say, however, that they are super delish.
Parsnips are high in dietary fiber, folate, omega 3s, potassium, and vitamins C, E, and K. Coconut is my favorite source of healthy fat. It nourishes the thyroid, boosts metabolism, and turns your body into a lean, mean, fat-burning machine. It is super heart healthy, high in fiber, and has a low Glycemic Index, keeping your blood sugar stable and reducing cravings for other, not so healthy treats.
These snacks are raw, vegan, gluten free, and insanely tasty. Seriously, what more could you ask for?!?
So, we’re all into starting new, feeling fresh, getting healthy, bla bla bla… but once that magical feeling of a brand new year starts to wear of this can be easier said than done… right?
In my opinion it’s all about finding little things that a ) you enjoy, b ) make you feel better, and c ) bring you one step closer to your health and fitness goals.
I must have been a pretty good girl this year, cuz Santa brought me a Vitamix for Christmas. Woohoo. Seriously… best. present. EVER. I have pretty much been juicing, blending, and pulverizing anything and everything I can get my hands on for the past week.
I’m so excited to bring you my favorite new recipes and I’m starting off with my ultimate fave ( and the way I like to start each day )… the Glowing Green Juice. I’m definitely a lover of juice… esp. green juice, but holy shiz… this seriously blows everything else out of the water. Being able to make my own, fresh juice is making me feel like a kid on Christmas every. single. day.
My girl Lauryn was ranting and raving about Kimberly Snyder’s book “The Beauty Detox Foods”. She highly highly recommended it to me so I did what I do best… ran to the store and bought it! She was right ( thx L, xo ). This book is AMAZE! It’s filled with sooooooooo much quality information and I really agree with her philosophy. Also, the back is filled with bomb-ass recipes, including the Glowing Green Juice. So, here it is!
I like to use water, spinach, romaine, celery, one apple, one pear, a splash of lemon, a few ice cubes, and a table spoon of chlorella ← more on that later.
P.S. This recipe will make enough for a few servings of juice. I like to store my leftovers in cute little glass bottles so that I can grab and go, or share with my friends and fam!
If I want it a little creamier I will add a banana. Chia seeds make a nice addition too. If I’m treating myself post-workout, I’ll add some Perfect Fit Protein. Yum. So delish!
This juice is SO refreshing, SO satisfying, and no joke, after a week of sipping it on the daily my skin is seriously glowing.
A total bonus…? Making fresh, healthy food for my pup & my nephew. Their current fave is a puree of spinach, carrot, and blueberries. Mmmmm. Stay tuned for more of my favorite, healthy Vitamix recipes.
