3 Ingredient Banana Pancakes

The-Fashion-Bite-Katie-Roof-Gluten-Free-3-Ingredient-Banana-Pancakes

So, this past weekend we had kind of a crazy storm! Well, crazy for San Diego. I mean, it didn’t last long and I hit the beach later that day… but it did blow a palm frond off of my tree and force me to throw on a sweater… so, pretty crazy I would say. Anyway, I woke up Saturday morning to the rain pounding on the skylights above my bed and immediately a Jack Johnson song popped into my head…

Can’t you see that it’s just raining?
Ain’t no need to go outside…
But, baby, you hardly even notice
When I try to show you this
Song is meant to keep ya
From doing what you’re supposed to
Waking up too early
Maybe we can sleep in
Make you banana pancakes
Pretend like it’s the weekend

So naturally, when I finally dragged my booty out of bed, I decided to do just that… whip up some delish, g-free, 3 ingredient banana pancakes.

Pancakes were my absolute favorite food as a kid and to this day they totally bring me back to my childhood. They are such a comfort food and a guilty pleasure, but these ones aren’t just gluten-free, they are 100% guilt free too!

What you’ll need: 2 eggs, 1 ripe banana, a dash of cinnamon. Yep, that’s it!

The-Fashion-Bite-Katie-Roof-3-Inredient-Gluten-Free-Banana-Egg-Pancakes-Ingredients

I used my VitaMix to mix it all up, cuz let’s face it… using a fork or whisk would require an output of energy from yours truly and that just ain’t what Saturday mornings are all about. However, if you aren’t feeling lazy or don’t have a blender / mixer / food processor, be my guest and whisk away.

Ok, back to the pancakes… throw your banana into your mixer and crack in two eggs. Throw in a dash of cinnamon and blend until smooth… but don’t totally liquify. That’s it, now you have your batter. (I like to double the recipe so that I can make pancakes for two or store the leftovers.)

The-Fashion-Bite-Katie-Roof-Gluten-Free-3-Ingredient-Banana-Pancakes-The-Steps

Now it’s time to cooke ’em up. You can use a pan or griddle, make sure to prep with some butter, ghee, or coconut oil so that your batter doesn’t stick. I typically make mine on the griddle, but this time I decided to try out my new stonewave microwave cooker. It’s like this little adobe pot that you can pop in the microwave and it basically cooks anything and everything in a couple of minutes. I’m obsessed! So how did my pancakes turn out? Perfection! They were fluffy, delicious, and didn’t stick at all.

The-Fashion-Bite-Katie-Roof-Gluten-Free-Healthy-Banana-Pancakes

Top ’em off with whatever you choose… pure maple syrup, homemade whipped cream, fresh fruit, almond butter, whatever floats your boat! Enjoy, enjoy, enjoy and tell me… how do you like to spend your lazy Saturdays?

Bite Me: Coconut Crazy

THE-FASHION-BITE-KATIE-ROOF-BITE-ME-COCONUT-CHIPS-DANG

News flash: I have a new obsession, or rather an old obsession coming to me in a new form…

Anyone who knows me knows that I LOVE coconut. Anything coconut. Everything coconut. Coconut milk, coconut water, coconut flakes, shredded coconut, coconut butter, coconut oil (I literally bathe in it), coconut palm sugar, plain old coconut. Basically, if you’re a coconut in any form… you are totally welcome into my life.

THE-FASHION-BITE-KATIE-ROOF-BITE-ME-DANG-COCONUT-CHIPS

So, what’s this new obsession? Dang Coconut Chips. Yep, toasted, crunchy, crispy, salty, sweet coconut chips. I’ve tried other coconut chips… but these ones undoubtedly take the cake. They have the perfect taste and the perfect, crunchy consistency. I picked up a bag of these bad boys at Whole Foods the other day and it was love at first site bite. I literally died. Maybe not literally, but pretty freaking close. These are hands down the best things I have ever tasted. Yes, you can incorporate these into your favorite recipes or use them as garnishes but I’m perfectly content eating them straight from the bag.

THE-FASHION-BITE-KATIE-ROOF-DANG-TOASTED-COCONUT-CHIPS

Furthermore, coconut is totally AMAZING for you. They are rich in healthy fat and lauric acid. Coconut boosts energy, increases immunity, regulates blood sugar, nourishes the thyroid, and can help cut down on belly fat. ALl of that and they are freaking delish. These coconut chips are gluten free, dairy free, vegan, all natural, non GMO, and all of that other good stuff!! Oh ya, and they contain only three ingredients… no preservatives or nasty chemicals. Woo-hoo!

I seriously dare you to try these and not fall head over heals! & while you’re at it… spill… what’s your favorite healthy snack?

Gluten Free Almond Butter Love Cups

Happy-Valentines-Day-Gluten-Free-Almond-Butter-Cups-Katie-Roof-The-Fashion-Bite

My G-free valentine, Erica, and I decided to team up this V-day to bring you the tastiest treats. Like, ever. I’m talking home made almond butter cups. Think Reese’s… but healthier and tastier x 100.

Katie-Roof-THe-Fashion-Bite-To-Die-For-Gluten-Free-Peanut-Butter-Cups

These babies are soooo easy to make, it’s stupid. No fancy kitchen tools. No forgetting to pre-heat the oven. Ain’t nobody got time for that!

Katie-Roof-The-Fashion-Bite-Fashionlush-Gluten-Free-Almond-Butter-Cups-Ingredients

You only need a few ingredients… most of which you most likely already have in your kitch.

The-Fashion-Bite-Katie-Roof-Fashionlush-Collab-Gluten-Free-Ingredients

+ A mini muffin tin (liners optional, yet recommended)

+ Chocolate chips (we went with organic semi-sweet)

+ Almond butter

+ Maple syrup

+ Chia seeds or chia powder

+ Pink himalayan salt

+ chocolate chips (we went with organic semi-sweet)

Melt your chocolate chips. You can do this using a double boiler on the stove top or just zap ’em in a microwave safe bowl at 30 second intervals until melted.

The-Fashion-Bite-Katie-Roof-Fashionlush-chocolate-cups-gluten-free

Pour your melted chocolate into your mini muffin tins. If you are not using liners, make sure to lightly grease them, preferably with coconut oil. Cover the bottom of each tin with chocolate. Make sure to spread the chocolate up the sides of each mold. This will become the chocolate ‘cup’ that holds your almond butter. Once each tin has been sufficiently chocolat-ed, pop it in the freezer for 30 minutes.

The-Fashion-Bite-Katie-Roof-Fashionlush-Chia-Almond-gluten-free-mixture

While they are freezing you can work on your almond butter mixture. Mix 1 cup almond butter with 3 tablespoons of organic maple syrup and about a spoonful of ground chia seeds. If you do not want to grind your own seeds, you can use chia powder. Mix, mix, mix until smooth.

The-Fashion-Bite-Katie-ROof-Fashionlush-gfree-almond-butter-cups

Once your chocolate has melted, fill each cup with a spoonful of your almond butter mixture. Top off each cup with more melted chocolate and sprinkle with pink himalayan sea salt. Pop your tray in the freezer for another 30 minutes.

The-Fashion-Bite-Katie-Roof-fashionlush-gluten-free-chocolate

Voila! That’s it. So easy, so festive, and insanely delish. I may or may not have had one for breakfast today. Oops. Not sorry. It wouldn’t be Valentines without a sweet lil treat.

Biteworthy Skincare

The-Fashion-Bite-Katie-Roof-Andalou-Naturals-Pumpkin-Glycolic-Mask

Let’s talk about skin.

I know… here we go again. Yes, I have a skin obsession! It’s pretty much the first thing I notice about people, I want to know everyone’s skin care secrets ( like, I literally ask randoms what they heck they use on their face to make it look so good ) , and if my skin isn’t looking flawless I freeeaaakkkk. Like crawl into a whole, hide under a blanket, become a hermit, & spend hours on hours researching online.

Lately my skin has been a little… lackluster shall we say. I think it’s ready to shed it’s winter coat. I’m not crazy about going to the derm cuz sorry, but I just don’t think that benzoyl peroxide and popping a pill is the answer to life’s problems… and that’s often what the doctor orders.

Soooooo… I visited my local health food store to see what they had to say. They were raving about this mask, so I had to give it a go!

The-Fashion-Bite-Katie-Roof-Andalou-Naturals-Pumpkin-Honey-GLycolic-Mask

Andalou Naturals has an amazing line of skin care. It’s all natural, cruelty free, GMO free, and certified gluten free… score! After testing out The Pumpkin Honey Glycolic Mask I am totally sold. My skin literally looks 20 x better than it did 10 minutes ago. No joke!

The-Fashion-Bite-Katie-Roof-Andalou-Non-GMO-Mask

Here’s why this mask is so amaze…

+ Pumpkin is rich in beta carotene. Natural enzymes remove dehydrated cells to brighten and smooth the skin.

+ Manuka honey soothes and heals to clarify and restore balance to the skin.

+ Glycolic Acid acts like a gentle, mini-peel by exfoliating dead cells and impurities.

+ Vitamin C evens tone, boosts collagen production, increases cellular turnover, and fights free radicals.

I’m so obsessed with this mask that I had to buy the entire brightening line. I’ll keep you guys posted on my favs ;) & I’m dying to know… what are your skincare secrets?!?

Snack-Time Saviors: Snip Chips

The-Fashion-Bite-Katie-Roof-Bite-Me-Wonderfully-Raw-My-Cocoroons-Snip-Chips

You probably know by now that Wonderfully Raw makes some of my absolute favorite snacks, so when I received a little package from them I was beyond stoked to find some of my go-to faves and discover some new ones!!

The-Fashion-Bite-Katie-Roof-Cocoroons,-Brussel-Bytes,-Snip-Chips

Let me just say that Snip Chips seriously just took my snacking game to the next level! ← OMG. They’re made of parsnips, coconut ← my fav food in the world , and other delicious, nutritious ingreds. I’m pretty sure I have never eaten a parsnip ( until now ). I’m not even sure what one looks like. I will say, however, that they are super delish.

The-Fashion-Bite-Katie-Roof-Wonderfully-Raw-Snip-Chips

Parsnips are high in dietary fiber, folate, omega 3s, potassium, and vitamins C, E, and K. Coconut is my favorite source of healthy fat. It nourishes the thyroid, boosts metabolism, and turns your body into a lean, mean, fat-burning machine. It is super heart healthy, high in fiber, and has a low Glycemic Index, keeping your blood sugar stable and reducing cravings for other, not so healthy treats.

The-Fashion-Bite-Katie-Roof-Wonderfully-Raw-Snip-Chips-Ingredients

These snacks are raw, vegan, gluten free, and insanely tasty. Seriously, what more could you ask for?!?

Stuff It!

The-Fashion-Bite-Katie-Roof-Stuff-It-Gluten-Free-Paleo-Thanksgiving-Stuffing

Are you guys wearing socks…? Cuz I’m about to knock them off with the most insanely delicious stuffing you have ever stuffed your face with! I’m not kidding. This stuffing is so good it literally brings a tear to my eye. The best part…? It’s totally G-Free and Paleo friendly too :)

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Stuffing-The-Goods

Growing up I was always the queen of stuffing ( well, maybe self proclaimed queen )… nonetheless, I was queen. Stuffing has always been my jam. It’s the part of the holiday menu I have always been in charge of, and obvi my favorite part of the meal. Finding out I was allergic to gluten kind of threw a monkey wrench into the whole queen of stuffing thing. I experimented with G-Free stuffing recipes for years to no avail. It just never came out right… thus, I was dethroned… until now!!!

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Thanksgiving-Stuffing-Antioxidant-Rich-Pecans

This year I came up with the most incredible gluten free stuffing. It’s super simple to make and I swear your Turkey Day guests will be begging you for the recipe. I tried it out last weekend, as I’m a firm believer in experimenting with new recipes prior to the day of an event. This can save you from major stress, and major disasters… totes worth it. Anyhooooo, it was love at first bite, and my family could not believe how light, fluffy, and delicious it was. Forget about letting your nasty, gluten free bread dry out over night, etc. etc. We’re making this from scratch.

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Thanksgiving-Stuffing-Ingredients

Tip: If you live in the real world and don’t have hours to spend chopping away in the kitch, or don’t want to ruin your holiday makeup crying over Mr. Onion you can pick up an organic, already chopped mixture of onion, celery, sage, and parsley in the produce section of Whole Foods. What a life saver!

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Thanksgiving-Stuffing-Onion-Celery-Herb-Shortcut

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Stuffing-Rosemary

The steps:

– Sauté ghee, onion, celery, parsley, and sage over medium heat for about 5 minutes.

– Add your sprig of chopped rosemary and pecans to your pan for the last 2 minutes.

– In a seperate bow, combine your dry ingredients – almond flour, coconut flour, baking soda, salt, and nutmeg.

– Now stir in your wet ingredients: eggs and chicken broth.

– Once your mixture is done sauteing, add it to your wet and dry ingredients and combine well.

– You will be left with a crumbly dough… leave it this way if you like your stuffing nice and fluffy. If you prefer a more dense stuffing, feel free to pack it more tightly.

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Thanksgiving-Stuffing-Bake-At-350

Pour your stuffing mixture into a Pyrex, Le Creuset, or some type of oven safe dish and bake at 350 for 35 – 40 minutes.

Enjoy, enjoy, enjoy and let me know how your guests liked loved it!

Bite Me: 10 Minute Sweet Potato Mash

The-Fashion-Bite-Katie-Roof-10-Minute-Sweet-Potato

You guys are in for a REAL treat! Remember when I mentioned that I would be bringing you one of my fav fall recipes…? Well, here it is. Oh, and you’re welcome in advance.

Who doesn’t like sweet potatoes? I mean… they’re everywhere, on every menu, in every form: baked, mashed, fried… you name it. I for one love a good sweet potato, especially on a cold rainy day like today. It’s the ultimate G-Free comfort food.

The-Fashion-Bite-Katie-Roof-10-Minute-Sweet-Potato-Ingredients

Ya know what’s not comforting? Spending all day in the kitch when I have a to-do list a mile long. That’s why my favorite recipes are the ones I can whip up in no time, yet act like I’ve been slaving away over a hot stove. So here it is… my ultimate 10 minute sweet potato.

The-Fashion-Bite-Katie-Roof-10-Minute-Sweet-Potato-The-Goods

First, take your potato and scrub ‘a dub it. These are root veggies, aka they grow in the dirt, aka they’re kind of filthy. Next dry it off and with a sharp knife poke 3 holes in each side of your potato ( this lets it breathe while it’s heating ). Now, place your potato on a paper  towel and microwave it for 5 minutes. Next, flip your potato upside-down and microwave for another 5. Carefully take your potato out of the microwave ( it’s going to be HOT ). Cut your potato in half and remove skin if desired.

The Fashion Bite Katie Roof 10 Minute Sweet Potato Leave Skin On For Boosted Benefits

If you prefer your potato sans skin it slips right off. If you’re like me, leave it on. The skin is seriously the best part. Sweet potatoes are packed with calcium, folate, potassium, beta-carotene ( an antioxidant that combats free radicals and is great for your skin ), and vitamins A & C. These nutrients totally thrive in the skin of the potato, so I say leave it on. With a fork, start mashing your potato.

The-Fashion-Bite-Katie-Roof-10-Minute-Sweet-Potato-Dont-Forget-The-Ghee

Now it’s time to add some ghee! The nutrients in the potato are actually said to be more easily absorbed when consumed with a small amount of healthy fat. Adding ghee is perfect for this reason, plus it’s delish. Sprinkle a little pink himalayan salt and cinnamon to taste. Voila! You’ve just made yourself the perfect sweet potato.

The-Fashion-Bite-Katie-Roof-10-Minute-Sweet-Potato-Enjoy

Feeding the whole fam? Not in a crunch for time? Pop your potato( es ) in the oven for an hour instead of using the microwave. Needless to say, I’ll definitely be whipping these bad boys up for Thxgiving.<– Only one week away! Yay!
