3 Ingredient Banana Pancakes

The-Fashion-Bite-Katie-Roof-Gluten-Free-3-Ingredient-Banana-Pancakes

So, this past weekend we had kind of a crazy storm! Well, crazy for San Diego. I mean, it didn’t last long and I hit the beach later that day… but it did blow a palm frond off of my tree and force me to throw on a sweater… so, pretty crazy I would say. Anyway, I woke up Saturday morning to the rain pounding on the skylights above my bed and immediately a Jack Johnson song popped into my head…

Can’t you see that it’s just raining?
Ain’t no need to go outside…
But, baby, you hardly even notice
When I try to show you this
Song is meant to keep ya
From doing what you’re supposed to
Waking up too early
Maybe we can sleep in
Make you banana pancakes
Pretend like it’s the weekend

So naturally, when I finally dragged my booty out of bed, I decided to do just that… whip up some delish, g-free, 3 ingredient banana pancakes.

Pancakes were my absolute favorite food as a kid and to this day they totally bring me back to my childhood. They are such a comfort food and a guilty pleasure, but these ones aren’t just gluten-free, they are 100% guilt free too!

What you’ll need: 2 eggs, 1 ripe banana, a dash of cinnamon. Yep, that’s it!

The-Fashion-Bite-Katie-Roof-3-Inredient-Gluten-Free-Banana-Egg-Pancakes-Ingredients

I used my VitaMix to mix it all up, cuz let’s face it… using a fork or whisk would require an output of energy from yours truly and that just ain’t what Saturday mornings are all about. However, if you aren’t feeling lazy or don’t have a blender / mixer / food processor, be my guest and whisk away.

Ok, back to the pancakes… throw your banana into your mixer and crack in two eggs. Throw in a dash of cinnamon and blend until smooth… but don’t totally liquify. That’s it, now you have your batter. (I like to double the recipe so that I can make pancakes for two or store the leftovers.)

Now it’s time to cooke ’em up. You can use a pan or griddle, make sure to prep with some butter, ghee, or coconut oil so that your batter doesn’t stick. I typically make mine on the griddle, but this time I decided to try out my new stonewave microwave cooker. It’s like this little adobe pot that you can pop in the microwave and it basically cooks anything and everything in a couple of minutes. I’m obsessed! So how did my pancakes turn out? Perfection! They were fluffy, delicious, and didn’t stick at all.

Top ’em off with whatever you choose… pure maple syrup, homemade whipped cream, fresh fruit, almond butter, whatever floats your boat! Enjoy, enjoy, enjoy and tell me… how do you like to spend your lazy Saturdays?

Bite Me: Coconut Crazy

THE-FASHION-BITE-KATIE-ROOF-BITE-ME-COCONUT-CHIPS-DANG

News flash: I have a new obsession, or rather an old obsession coming to me in a new form…

Anyone who knows me knows that I LOVE coconut. Anything coconut. Everything coconut. Coconut milk, coconut water, coconut flakes, shredded coconut, coconut butter, coconut oil (I literally bathe in it), coconut palm sugar, plain old coconut. Basically, if you’re a coconut in any form… you are totally welcome into my life.

THE-FASHION-BITE-KATIE-ROOF-BITE-ME-DANG-COCONUT-CHIPS

So, what’s this new obsession? Dang Coconut Chips. Yep, toasted, crunchy, crispy, salty, sweet coconut chips. I’ve tried other coconut chips… but these ones undoubtedly take the cake. They have the perfect taste and the perfect, crunchy consistency. I picked up a bag of these bad boys at Whole Foods the other day and it was love at first site bite. I literally died. Maybe not literally, but pretty freaking close. These are hands down the best things I have ever tasted. Yes, you can incorporate these into your favorite recipes or use them as garnishes but I’m perfectly content eating them straight from the bag.

THE-FASHION-BITE-KATIE-ROOF-DANG-TOASTED-COCONUT-CHIPS

Furthermore, coconut is totally AMAZING for you. They are rich in healthy fat and lauric acid. Coconut boosts energy, increases immunity, regulates blood sugar, nourishes the thyroid, and can help cut down on belly fat. ALl of that and they are freaking delish. These coconut chips are gluten free, dairy free, vegan, all natural, non GMO, and all of that other good stuff!! Oh ya, and they contain only three ingredients… no preservatives or nasty chemicals. Woo-hoo!

I seriously dare you to try these and not fall head over heals! & while you’re at it… spill… what’s your favorite healthy snack?

The-Fashion-Bite-Katie-Roof-Hello-2014-New-Years-Be-Good-To-Me

It’s officially official… 2014 has arrived… and frankly, I’m pretty freaking stoked. I am beyond ready for a new year and a fresh start. 2013 was great, don’t get me wrong, but there is just something so invigorating about that feeling of starting new. My goals and aspirations for this year are bigger and better than ever, and I have a funny feeling that 2014 is going to be kind of magical.

I did NOT ring in the new year in my typical fashion ( meaning a tight dress, loud music, way too much champagne, and a wicked hangover come January 1st ). Nope. Instead I went on a fantastic run, worked, worked, worked, lounged around in my sweats, sipped on green juice ’til my little heart was content ( stay tuned for my fav recipe ), and watched the ball drop… East Coast time. I know what you are thinking. Slow down, Katie… that lifestyle will kill you.

Seriously though, it was kind of refreshing. 2014 is all about health, happiness, and productivity. ← Cheers to that! Don’t worry, I did enjoy some champs while watching Kathie Lee & Hoda’s “A Toast to 2013”. LOL. What are those two on… and how can I get some? I kid, I kid.

Soooo… spill! How did you ring in the new year? What’s your biggest wish for 2014? Thanks for making 2013 so amaze, and I promise LOTS of exciting things in the year to come ;)

Snack-time Saviors: Brussel Bytes

The-Fashion-Bite-Katie-Roof-Bite-Me-Wonderfully-Raw-Brussel-Bytes

If there’s one thing I love, it’s snacking. What I don’t love is stuffing myself full of empty cals. I’m always looking for healthy snacks that not only satisfy my munchies, but actually do something good for my body! Some of my favs include celery and raw almond butter, jicama with lime, raw sprouted almonds, Green Chia Kombucha, coconut H2O, and my new fav… Brussel Bytes!

The-Fashion-Bite-Katie-Roof-Bite-Me-Skinny-Snacks

These things are stupid good! My nutritionist introduced me to them and I’m so so happy she did! They are raw, organic, gluten free, and freaking delicious. They’re made of brussel sprouts ← duh, pumpkin seeds, coconut, and deliciousness. I know… who knew coconut + brussel sprouts = the tastiest treat ever?!?

Wonderfully Raw makes tons of other healthy snacks including my favorite dessert, Cocoroons ← holy shiz.. more on those later!

Stuff It!

The-Fashion-Bite-Katie-Roof-Stuff-It-Gluten-Free-Paleo-Thanksgiving-Stuffing

Are you guys wearing socks…? Cuz I’m about to knock them off with the most insanely delicious stuffing you have ever stuffed your face with! I’m not kidding. This stuffing is so good it literally brings a tear to my eye. The best part…? It’s totally G-Free and Paleo friendly too :)

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Stuffing-The-Goods

Growing up I was always the queen of stuffing ( well, maybe self proclaimed queen )… nonetheless, I was queen. Stuffing has always been my jam. It’s the part of the holiday menu I have always been in charge of, and obvi my favorite part of the meal. Finding out I was allergic to gluten kind of threw a monkey wrench into the whole queen of stuffing thing. I experimented with G-Free stuffing recipes for years to no avail. It just never came out right… thus, I was dethroned… until now!!!

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Thanksgiving-Stuffing-Antioxidant-Rich-Pecans

This year I came up with the most incredible gluten free stuffing. It’s super simple to make and I swear your Turkey Day guests will be begging you for the recipe. I tried it out last weekend, as I’m a firm believer in experimenting with new recipes prior to the day of an event. This can save you from major stress, and major disasters… totes worth it. Anyhooooo, it was love at first bite, and my family could not believe how light, fluffy, and delicious it was. Forget about letting your nasty, gluten free bread dry out over night, etc. etc. We’re making this from scratch.

Tip: If you live in the real world and don’t have hours to spend chopping away in the kitch, or don’t want to ruin your holiday makeup crying over Mr. Onion you can pick up an organic, already chopped mixture of onion, celery, sage, and parsley in the produce section of Whole Foods. What a life saver!

The-Fashion-Bite-Katie-Roof-Gluten-Free-Paleo-Stuffing-Rosemary

The steps:

– Sauté ghee, onion, celery, parsley, and sage over medium heat for about 5 minutes.

– Add your sprig of chopped rosemary and pecans to your pan for the last 2 minutes.

– In a seperate bow, combine your dry ingredients – almond flour, coconut flour, baking soda, salt, and nutmeg.

– Now stir in your wet ingredients: eggs and chicken broth.

– Once your mixture is done sauteing, add it to your wet and dry ingredients and combine well.

– You will be left with a crumbly dough… leave it this way if you like your stuffing nice and fluffy. If you prefer a more dense stuffing, feel free to pack it more tightly.

Pour your stuffing mixture into a Pyrex, Le Creuset, or some type of oven safe dish and bake at 350 for 35 – 40 minutes.

Snack-time Saviors: Kombucha Style

The-Fashion-Bite-Katie-Roof-Kombucha-Lovin

I always wished I was one of those people who just couldn’t  get enough Kombucha. Unfortunately, that just wasn’t  the case… until now!

The-Fashio-Bite-Katie-Roof-Raw-Chia-Energy

GT’s Green Chia Kombucha may just be the tastiest treat ever. It’s not too vinegar-y (which is why I tend to not be crazy for Kombucha), it’s so refreshing, gives me TONS of energy, and supplies some pretty crazy health benefits. It’s also packed with chia seeds, which I love.

The-Fashion-Bite-Katie-Roof-Green-Chia-Kombucha-Major-Energy-Boost

So, what are the health benefits of Kombucha? First of all, it’s been around for 2000+ years and is referred to as ‘the immortal health elixir’. It’s been shown to fight cancer, arthritis, and other degenerative diseases. Kombucha is an amazing detoxifier, boosts your immune system, promotes joint health, aids in digestion, and has even been shown to reduce or eliminate symptoms of depression, anxiety, and fibromyalgia.

If you already love Kombucha, I suggest trying out my favie flavie. If you’ve been hesitant to try this strange concoction, don’t be. You’ve got nothing to lose and SO much to gain!

Why You Should Freeze Your Nuts

TFB-The-Fashion-Bite-Freeze-Your-Nuts

Ok… I know what you’re thinking. Let’s get our minds out of the gutter… I’m talking almonds (my fav), cashews, and any other nuts of your liking. You know, nuts. Those little gems that provide protection against diabetes, heart disease, and cancer!

First of all, try to buy raw, sprouted nuts <– they’re available in the raw section of your local Whole Foods or health food store. If you can’t find them already sprouted you can sprout your own by soaking them overnight.

Why should you sprout your nuts? Raw almonds naturally contain tannic acid. This enzyme inhibitor protects them from sunlight, moisture, etc. It can also make them extremely difficult to digest properly and inhibits your body from absorbing all of those awesome nutrients such as protein, fiber, omega 3 and 6 fatty acids and lipase (an enzyme which digests fat) <– hello, who doesn’t like the sound of that?

TFB-The-Fashion-Bite-Sprouted-Nuts-Are-The-Best-

Why you should never roast your nuts… like ever! Roasting nuts destroys many of their nutrients and releases free radicals. It also destroys their naturally delish flavor, so nasty additives such as MSG and Maltodextrin ( which are both neurotoxins BTW ) are typically added to replace the lost flavor ( YUCK )!!

So let’s get to the point… why should you freeze your nuts? Do you ever notice how when nuts are left at room temperature for awhile the taste and texture get a little funky? NBD… that’s just your nuts going RANCID! Nuts are composed of delicate, healthy fats <– ya know… the kinds that actually help you to lose weight! These fats are somewhat volatile and do NOT do well at room temp.

In short… freezing your nuts will keep them fresher, healthier, and tastier for much longer… plus, taking about your frozen nuts may just be the conversation starter you’ve been waiting for ;)

The Dirty On My 3 Day Cleanse…

20130603-210022.jpg

Sooo… that may seem like an oxymoron, but I want to give you the low down on the Mykos 3 day cleanse. To make a long story short… I LOVED it!!! Here’s why…

20130603-210041.jpg

First of all, let’s talk about the juices. I started each day with 16 oz of lemon water. This totally cleans out your system and preps you for the day. Throughout the day I drank 6: a green juice, spicy lemonade, nut milk (<– yum), alive tea, a second green juice, and last but not least a pink cooler. All of the bevies were delicious in their own special way. If you like green juice, you will love this one. It was super tasty and packed a real nutrient punch. The spicy lemonade was great. I like things spicy, so the cayenne pepper was a total bonus! The nut milk… where do I begin? I’m a huge fan of almond milk (it’s the only kind of “milk” I ever use), but this nut milk was seriously out of this world. I don’t know what it was that made it so special, but I’ve gotta say that breaking up all of the fruity-ness with this creamy treat in the afternoon really made my day! The alive tea was minty and refreshing, and the pink cooler was sooooo delish. It was infused with fruity goodness and I definitely ate the blueberries floating at the bottom (<– solids… score)!!

20130603-210055.jpg

For me, the first day was the toughest. I am prone to headaches as it is and I always get them when I am cleansing. Today was no different. I had a headache pretty much all day… not a terrible one, not a turn off the lights and don’t talk to me headache, just a dull, nagging headache. I didn’t take anything for it. Popping an Advil during a cleanse just seems wrong. I knew it would pass, and it did! Other than that minor annoyance, day one was smooth sailin’! I drank tons of water throughout the day and for “dinner” I had a small bowl of lettuce with 1/3 of a green pepper, 1/3 of a persian cucumber and some lemon juice squeezed on top (I ate this all 3 nights btw). Greens are allowed on this cleanse… hence my green dinner. Kermit would be proud.

20130603-210110.jpg

Day two was a breeze. I drank my lemon water and my juices as per usual. I felt great and I was already down 3 lbs.  I don’t necessarily think that weighing yourself on the daily is a healthy habit, however, I think that when you’re on a cleanse it is super motivating. Just keep in mind that part of your weight loss is water weight.

20130603-210123.jpg

Day three! Day three is always something to celebrate if you ask me. The finish line is in sight and you start to feel a sense of accomplishment. Day three’s menu was the same as days one and two with one exception. The second green juice was replaced with a second spicy lemonade. This gave me an extra cleansing kick! I may have been a bit to active on day three which led to a little dizziness and light headedness in the afternoon. I knew that it was no big deal, I had just expended way more calories than I had been consuming. A handful of raw almonds did the trick and I was feeling back to normal in no time. Raw nuts are permitted on the cleanse if you feel like you are totally famished, but I didn’t need them up until this point. I love almonds and I knew that if I had started them earlier in the cleanse I would be way too tempted to snack.  The rest of the evening was easy peasy. I kicked back with a Lifetime movie (<– my guiltiest pleasure) and thought about the healthy foods I would eat on day four!

It’s so important not to undo what you have just done. Post cleanse you should focus on small, nutrient dense, super healthy meals and tons of water. I mean, your stomach has shrunk and your bladder has grown so you might as well take advantage of it! I started my first post cleanse day with my lemon water (this will now be how I start each and every day). I made a smoothie with almond milk, berries, and some Perfect Fit protein powder for breakfast and it was so tasty! I continued my day with small, healthy snacks like nuts, fruits, and veggies. I found that I was getting full really easily and drinking water like a fiend. It was awesome. I think it’s important to choose something other than food to reward yourself for finishing the cleanse. I rewarded myself with some new running shoes followed by an awesome workout! All in all, I absolutely loved this cleanse! I lost 6 lbs in total, but more importantly I feel great! I am bursting with energy, my head feels clear, my skin looks and feels amazing, and I am super motivated to keep up the good work!

Here are the deets on Mykos… They are a locally based San Diego company that makes delicious juice! Their website is not up and running quite yet, but here is the link. You can input your information and receive an email just as soon as it is. In the meantime, visit their Facebook page!

Chocolate Coconut Water… aka Your New Best Friend

zico chocolate coconut water

K… so I’m kind of obsessed with coconut. Coconut oil, coconut body butter, coconut perfume, coconut milk, even straight up coconut. Despite all of these amazing coconut-y products, I gotta say that for me coconut water takes the cake. It is my absolute favorite bevie and I always have it on me. I pretty much thought that coconut water was the most amazing thing in the whole wide world… until today. Apparently those coconuts have really upped their game and I was completely blown away when I tasted Zico’s chocolate coconut water for the first time today!! OHMYGOSH! It seriously tastes like chocolate milk only way better, lighter, more refreshing, and loaded with all sorts of good for you stuff  [[like electrolytes and potassium]]. Coconut water contains antiviral, antibacterial, anti-inflammatory and antioxidant properties. It also serves as a cure all for pretty much whatever ails you… dehydration, sluggishness, intestinal problems, skin issues, the list goes on. It wasn’t until today that I discovered it’s also a cure for a chocolate craving. Yup! One cup contains only 70 calories and is super low in sugar, making it a great choice to satisfy that sweet tooth and gain some much needed nutrition while you’re at it. So go ahead… give it a try. I promise it won’t disappoint!

Must Have Mondays: Shake it up!!

vega one

One of my absolute favorite must-haves of the moment is the Vega One protein powder. I got completely hooked on this stuff while doing a recent cleanse… now I just don’t feel right without my morning shake. This stuff not only tastes great [great texture and no chalky after taste], but it is packed with some serious good-for-you goods. Between the protein, fiber, probiotics, greens, omega-3s and antioxidants it provides 50% of the recommended daily intake [RDI] of vitamins and minerals plus it’s totally allergen friendly! It is plant based, completely vegan, and gluten freeyay! It’s available at Whole Foods and many health food stores. I have both the chocolate and vanilla flavors. Each morning I mix a scoop with some frozen berries, unsweetened vanilla almond milk or coconut milk, and a half a banana or some frozen mango… mmmmm! If health is one of your goals for the new year… this is a great thing to incorporate into your daily routine. So mix it up… drink it down… and cheers to a happy and healthy you!
