News flash: I have a new obsession, or rather an old obsession coming to me in a new form…

Anyone who knows me knows that I LOVE coconut. Anything coconut. Everything coconut. Coconut milk, coconut water, coconut flakes, shredded coconut, coconut butter, coconut oil (I literally bathe in it), coconut palm sugar, plain old coconut. Basically, if you’re a coconut in any form… you are totally welcome into my life.

So, what’s this new obsession? Dang Coconut Chips. Yep, toasted, crunchy, crispy, salty, sweet coconut chips. I’ve tried other coconut chips… but these ones undoubtedly take the cake. They have the perfect taste and the perfect, crunchy consistency. I picked up a bag of these bad boys at Whole Foods the other day and it was love at first site bite. I literally died. Maybe not literally, but pretty freaking close. These are hands down the best things I have ever tasted. Yes, you can incorporate these into your favorite recipes or use them as garnishes but I’m perfectly content eating them straight from the bag.

Furthermore, coconut is totally AMAZING for you. They are rich in healthy fat and lauric acid. Coconut boosts energy, increases immunity, regulates blood sugar, nourishes the thyroid, and can help cut down on belly fat. ALl of that and they are freaking delish. These coconut chips are gluten free, dairy free, vegan, all natural, non GMO, and all of that other good stuff!! Oh ya, and they contain only three ingredients… no preservatives or nasty chemicals. Woo-hoo!

Gluten Free Almond Butter Love Cups

My G-free valentine, Erica, and I decided to team up this V-day to bring you the tastiest treats. Like, ever. I’m talking home made almond butter cups. Think Reese’s… but healthier and tastier x 100.

These babies are soooo easy to make, it’s stupid. No fancy kitchen tools. No forgetting to pre-heat the oven. Ain’t nobody got time for that!

You only need a few ingredients… most of which you most likely already have in your kitch.

+ A mini muffin tin (liners optional, yet recommended)

+ Chocolate chips (we went with organic semi-sweet)

+ Almond butter

+ Maple syrup

+ Chia seeds or chia powder

+ Pink himalayan salt

Melt your chocolate chips. You can do this using a double boiler on the stove top or just zap ’em in a microwave safe bowl at 30 second intervals until melted.

Pour your melted chocolate into your mini muffin tins. If you are not using liners, make sure to lightly grease them, preferably with coconut oil. Cover the bottom of each tin with chocolate. Make sure to spread the chocolate up the sides of each mold. This will become the chocolate ‘cup’ that holds your almond butter. Once each tin has been sufficiently chocolat-ed, pop it in the freezer for 30 minutes.

While they are freezing you can work on your almond butter mixture. Mix 1 cup almond butter with 3 tablespoons of organic maple syrup and about a spoonful of ground chia seeds. If you do not want to grind your own seeds, you can use chia powder. Mix, mix, mix until smooth.

Once your chocolate has melted, fill each cup with a spoonful of your almond butter mixture. Top off each cup with more melted chocolate and sprinkle with pink himalayan sea salt. Pop your tray in the freezer for another 30 minutes.

Voila! That’s it. So easy, so festive, and insanely delish. I may or may not have had one for breakfast today. Oops. Not sorry. It wouldn’t be Valentines without a sweet lil treat.

Stuff It!

Are you guys wearing socks…? Cuz I’m about to knock them off with the most insanely delicious stuffing you have ever stuffed your face with! I’m not kidding. This stuffing is so good it literally brings a tear to my eye. The best part…? It’s totally G-Free and Paleo friendly too :)

Growing up I was always the queen of stuffing ( well, maybe self proclaimed queen )… nonetheless, I was queen. Stuffing has always been my jam. It’s the part of the holiday menu I have always been in charge of, and obvi my favorite part of the meal. Finding out I was allergic to gluten kind of threw a monkey wrench into the whole queen of stuffing thing. I experimented with G-Free stuffing recipes for years to no avail. It just never came out right… thus, I was dethroned… until now!!!

This year I came up with the most incredible gluten free stuffing. It’s super simple to make and I swear your Turkey Day guests will be begging you for the recipe. I tried it out last weekend, as I’m a firm believer in experimenting with new recipes prior to the day of an event. This can save you from major stress, and major disasters… totes worth it. Anyhooooo, it was love at first bite, and my family could not believe how light, fluffy, and delicious it was. Forget about letting your nasty, gluten free bread dry out over night, etc. etc. We’re making this from scratch.

Tip: If you live in the real world and don’t have hours to spend chopping away in the kitch, or don’t want to ruin your holiday makeup crying over Mr. Onion you can pick up an organic, already chopped mixture of onion, celery, sage, and parsley in the produce section of Whole Foods. What a life saver!

The steps:

– Sauté ghee, onion, celery, parsley, and sage over medium heat for about 5 minutes.

– Add your sprig of chopped rosemary and pecans to your pan for the last 2 minutes.

– In a seperate bow, combine your dry ingredients – almond flour, coconut flour, baking soda, salt, and nutmeg.

– Now stir in your wet ingredients: eggs and chicken broth.

– Once your mixture is done sauteing, add it to your wet and dry ingredients and combine well.

– You will be left with a crumbly dough… leave it this way if you like your stuffing nice and fluffy. If you prefer a more dense stuffing, feel free to pack it more tightly.

Pour your stuffing mixture into a Pyrex, Le Creuset, or some type of oven safe dish and bake at 350 for 35 – 40 minutes.

Bite Me: Coco-Nutz

So, coconut milk may just be the best thing that has ever happened to my morning routine. I’m not talking the kind in the carton full of nasty chemicals and fake ingreds… I’m talking the kind in the can, ya know, the one that’s make of actual coconut and nothing more. ( My fav is Native Forest because the can lining is BPA free! Soops important. )

Coconut milk is packed with some serious health benies. It’s packed with vitamins C, E, B1, B3, B5, and B6 as well as iron, calcium, and magnesium. Magnesium helps to calm the nerves ( a necessity for me ) and maintain normal BP. Coconut milk regulates blood sugar, making you feel fuller, longer and thus eating less throughout the day. Woohoo! Also, the vitamin C and copper content improves skin elasticity and prevents wrinkles making coconut milk one of the best anti-aging superfoods! Who doesn’t like the sound of that? It’s thick and creamy and makes the perfect addition to my morning tea ( this one’s my new fav ) and my morning green shake.

O-M-Ghee

Bite-Me---Oh-Em-Ghee

OMG… let’s talk about one of my favorite foods, ghee! You’re probably asking yourself, what the eff is ghee? (Either that or you’ve already hopped on the ghee bandwagon with me). Either way, let me break it down for you.

Ghee is essentially clarified butter. It’s composed of a short chain of fatty acids that is readily metabolized by the body. Ghee has been shown to reduce cholesterol, support brain health, treat constipation ( ya, I said it ), and help with digestion. It also promotes healthy bacteria in the intestine which can aid in weight loss (score!!). It’s packed with antioxidants and helps your body absorb vitamins and minerals from other foods. Oh ya, and also… it’s DELICIOUS!

OMGhee-TFB-Ghee

You can use ghee in place of butter, olive oil, or basically anything that calls for oils or fats. You’ll find it in the dairy aisle of your local Whole Foods ( if you can’t find it, just ask)! Ghee is a stable fat and can withstand super high temperatures ( meaning you can avoid those nasty free radicals many other oils release when they are heated ). I love sautéing my kale in ghee, adding my favorite garlic pink himalayan salt, pairing it with a chicken breast, and voila… a super easy, super healthy dinner.

Lately, my skin has been super dry… and if my skin is not perfect I freak the eff out! I’m a hypochondriac, so I was pretty much diagnosing myself with every skin issue under the sun… one week it was “my eczema is flaring up” and the next it was “ugh, check out my impetigo” [I was also buying tons of products that weren’t working]. My fam and friends had no prob pointing out the fact that I was bat shiz cray and nothing was wrong with me. The truth is… nothing was “wrong” with me. My skin was just dry. A) I recently moved from SD to SF, so the change in climate was partially to blame … and B) Hello, it’s Fall! A change in season always means you may have to tweak your skin care routine just a bit… so I did.

Who knew this magic potion would be the cure? Darphin’s Organic Rose Aromatic Face Oil is seriously life changing. I had gotten a sample of it and fell head over heels. After one use not only was the dryness gone [I mean… gone], but my skin was seriously glowing! I wouldn’t typically drop $70 bucks on a tiny bottle of oil, but I was back at the store the very next day because I knew I couldn’t live without it. [I also scored some more samples to give to my friends and fam for putting up with my crazy a**] This product contains rose hip oil and evening primrose oil, among many others. Darphin makes all of their own essential oils so they are super high quality and super pure. This stuff smells like heaven, completely calms my senses, and is a skin savior!

Skin oils are formulated to balance your skin’s hydration level. Lotions sometimes over-hydrate, or simply sit on top of the skin and are never absorbed. Do you ever feel like you are moisturizing like crazy yet your skin remains parched…? Yep, that’s why. Oils are basically the answer to every skin problem… even acne! Got oily skin? There’s a skin oil for that. Rosacea…? Skin oil to the rescue! Oils aren’t one size fits all though… so do your research.

Ideally your skin oil should be 100% natural and organic, free of parabens and any other icky stuff, and be non-comedogenic. Darphin has got you covered on all of those bases. They offer a huge range of oils, depending on your needs. I highly recommend checking them out. [BTW, this is not a sponsored post… I’m just a big fan]

If their price point seems a little steep remember that you only need to use five small drops, so it will last and last. However, you totally have other, more affordable options. Loreal offers a more pocket friendly facial oil. I haven’t tried it yet, but I’ve heard great things. Also, don’t forget about your local Whole Foods. They have aisles of oils and the folks in the Whole Body section are super knowledgeable about skincare!

Why I wash my face with honey…

I absolutely love honey… drizzled on top of a grapefruit, mixed into some greek yogurt, stirred into my tea, and of course, smothered all over my face. Yes, it’s true… honey makes the absolute best face wash! Here’s why… Honey effectively cleans your skin without stripping it of its natural oils, thus disrupting the pH. Your skin will look, feel, and function at its best when it maintains a pH of 4.5 – 5.5. Honey just happens to have a pH of 4.5. How convenient. Honey is naturally antibacterial, antimicrobial, antifungal, and super moisturizing. Got oily skin? Not to worry, though it sounds a bit oxymoronic honey also has drying properties. Is your skin dull, uneven, spotted, or scarred? You’re in luck… honey naturally contains gluconic acid. This AHA (alpha hydroxy acid) will help to lighten spots and scars while brightening your complexion. This killer combo makes honey suitable for absolutely every skin type.

After just one wash you will notice a difference… after a week… you will seriously be in skin heaven. Since I replaced my face wash with honey I’ve been able to skip the foundation/concealer part of my makeup regime because my skin has been as smooth as a baby’s bum. Furthermore, I have literally been stopped by random people on an almost daily basis complimenting my skin. I’m serious! From sales girls at H&M to baristas at Starbucks… even an old man at the Home Depot told me I had a “keen complexion” (<– so adorable)! What I’m trying to say is that you can have glowing skin too… just add honey!

Here’s how… If you are wearing makeup, remove it. I like to use a carrier oil such as apricot kernel oil, sweet almond oil, rose hip oil (my fav), or jojoba oil. Now you are ready to wash! Simply wet your hands and face with water, place a tablespoon or two of honey in your hands, and wash as you would with any other face wash, massaging in small circles and making sure not to neglect any part of your face (and neck). If I have time, I let it sit for a few minutes. This really allows it to sink in and do it’s thing! When you are done, just rinse it off and tada! When I’m finished I like to tone & moisturize with some rosewater + glycerine (Toner and moisturizer in one? Yes please!) It’s really as simple as that! In conclusion, honey makes for a super quick, super easy, super affordable, and super amazing facial cleanser and I urge each and every one of you to give it a go!

P.S. Remember, your skin is your largest organ so make sure to use natural, raw, organic honey! I like the one from Trader Joe’s. You can pick it up for about $5. Talk about affordable skincare!
